Ginger Snaps




I don't know if I have ever done a recipe post. So here we go. These ginger snaps are perfect for the cool weather that has suddenly approached us here in the wonderful Utah. They are perfect with a cup of milk and an episode of Friends.

A couple of weeks ago, one of the ladies that I work with brought these cookies and they were sooooooo good.

I don't know about you guys but the only ginger snaps I've had are the ones from the store that are kind of hard and crunchy, and I've never been too much of a fan.

But these my friends are soft goooey yummy ginger snaps.


Dry ingredients:

4 cups flour
4t baking soda
1t salt
2T ginger
2t cinnamon

Wet ingredients:

1 1/2 c cooking oil
2 c sugar
2 eggs
1/2 c molasses


**yes, the sugar is in with the wet ingredients, but that's how they need to be mixed together.

Sift together dry ingredients, set aside. With beater blend together thoroughly oil, sugar, eggs, and molasses. Stir in dry ingredients until blended. Refrigerate for 1 hour. Then form into balls, using 1 t of dough. Roll in granulated sugar and bake on ungreased baking sheet at 350 degrees for 8 min. Cool on baking rack.

Makes 4 doz.
